A question from my mother, who knows I talk to people on that side of the Pond and has questions. There's a food called "bubble and squeak," which is absolutely disgusting and made of overboiled cabbage and potato lumps. It's either English or Irish. I'm supposed to find out which.

Which?

(And if you have a recipe for something that doesn't taste like boiled gym socks, it would be much appreciated.)

It's English, as far as I'm aware

Now, you are misjudging it quite a lot. But it sounds like you are not cooking it properly

Bubble and squeak is a left over dish, which can (but not necessarily) contains cabbage. You take your left over vegetables (though left over meat, cut up small, can also work), MASHED potato (NOT potato lumps) and ONION (very important) mix together and fry it. It is most tasty and a great way to use up left over vegetables. It was traditionally cabbage because that was a vegetable everyone had

I'd also advise looking at different things to add - garlic is a favourite and paprika can work too, depending on your veg. Mixing mashed yams in with the mashed spuds is also nice.

I didn't cook it at all. That was all mother's doing, and it sounds to me like she made a hash of it too. I'll pass the word along.

Aye, do for 'tis most tasty and tasty ways of using leftovers are the BEST.

And it goes with ANYTHING. Oh, and shallow fry, not deep fry (have been talking to scots all day. They deep fry ANYTHING)

And alliums. Alliums belong in almost everything. Unless you talk to my brother, but he doesn't like curry and has no right to judge food ever.
